Sapling Forest Feast Cocktails: Sustainable recipes foraged in nature

The Sapling Forest Feast gave us so many special moments shared with a community of like minded individuals. Each of these moments was savoured and spent with a Sapling cocktail in hand, carefully curated by our talented Penelope Mcmylor

Prior to the event, she’d been crafting an array of tinctures and cordials made using in season and natural ingredients to showcase all of nature’s finest flavours. The evening began with a Woody Mary using The Pickle House’s tomato juice and our Sapling Climate Positive Vodka. Followed by dashes of preserved lemon hot sauce and garnished with a liquorice root and an Isle of Wight cherry tomato. 

Then it was the Julius Spritz, inspired by our brand ambassador Julius Roberts, a refreshingly vibrant tipple made using our Sapling Raspberry and Hibiscus Vodka. Mixed with a homemade Blackberry cordial and topped with MOMO Raspberry and Hibiscus Kombucha with English sparkling wine, and finally garnished with juicy in season blackberries and foraged herbs. 

This was followed by the Pine and Apricot Sour which was a herbaceous and fragrant sour made using our Sapling London Dry Gin shaken with a homemade smoked apricot and vanilla cordial, and garnished with foraged Tsuga pine and smoked Maldon salt

The Regenerative Martini was served alongside the feast and it was beautiful in its simplicity. Our British Regenerative vodka, made using wheat from Bank Farm in Kent, stirred down with English vermouth, and served iced cold with Citizens of Soil extra virgin olive oil

The Frolic in the woods was made using our Sapling Vodka, peach liqueur, Gooseberry Aperitif and topped with Fever-tree Blood Orange Soda, and garnished with a bay leaf. Each cocktail was a homage to savouring the present and appreciating the quality of good and natural ingredients.

Woody Mary

50ml Sapling Climate Positive Vodka
120ml Pickle House Tomato Juice
2 Dash Eaten Alive Preserved Lemon Hot Sauce

To make this vibrant and savoury cocktail, start by filling a highball glass with cubed ice. Pour in 50ml of Sapling Climate Positive Vodka, followed by 120ml of Pickle House Tomato Juice. Add two dashes of Eaten Alive Preserved Lemon Hot Sauce for a tangy, spicy kick. Gently build all the ingredients directly in the glass, giving it a light stir to combine. Garnish with a liquorice root and a skewer of Isle of Wight cherry tomatoes for a bold, aromatic finish.


The Julius Spritz

25ml Sapling Raspberry Vodka with Hibiscus
25ml Home-made Blackberry Cordial
100ml Momo Raspberry Hibiscus Kombucha
50ml English Sparkling Wine

Begin by filling a wine glass with cubed ice. Pour in 35ml of Sapling Raspberry Vodka and 25ml of blackberry cordial, then top with 100ml of Kombucha for a refreshing twist. Add 50ml of English sparkling wine to bring brightness and effervescence.

Stir gently to combine all the ingredients. Garnish with a fresh foraged herb and a plump blackberry for a beautiful, wild finish.


Pine and Apricot Sour 

50ml Sapling Climate Positive Gin
25ml Smoked Apricot & Vanilla Cordial
15ml Supasawa
15ml Foamer

In a shaker, combine 50ml of Sapling Climate Positive Gin with 25ml of smoked apricot and vanilla cordial, 15ml of Supasawa, and 15ml of foamer. Shake it first without ice, once frothed, add ice and shake well.

Strain into a rocks glass filled with cubed ice. Garnish with a touch of pine and a sprinkle of smoked salt for an earthy, aromatic finish.


Frolic in the woods

35ml Sapling Climate Positive Vodka
20ml Peach Liqueur
10ml Sipello
100ml Fever-Tree Blood Orange Soda

Fill a Collins glass with cubed ice. Pour in 35ml of Sapling Climate Positive Vodka, followed by 20ml of peach liqueur and 10ml of Sipello. Top with 100ml of Fever-Tree Blood Orange Soda for a vibrant, citrusy lift. Build all the ingredients directly in the glass and give a gentle stir. Garnish with a bay leaf for a subtle, herbal aroma.

 

Regenerative Martini 

50ml Sapling Regenerative Vodka
5ml English Vermouth

In a mixing glass filled with ice, combine 50ml of Sapling Regenerative Vodka with 5ml of English vermouth. Stir gently until well chilled and perfectly diluted. Strain into a chilled Nick & Nora glass, and finish with a delicate drop of Citizens of Soil olive oil for a smooth, elegant garnish.
